There are always going to be bung stretches in life, but often when we think the universe isn't keen as, it might be that we're looking at it upside down. Something tells me you're in for more surprises.
Anyway, about the combat challenges: Heavy Missiles, and higher-tech drones. Really, look at the situation; bright young scarfie in a modestly schooled up cruiser and light missiles is not going to match up against a fleet of the tougher eggs out there. Higher-tech, well-tuned drones do mean as damage and will generally cark most of your ratbags, like adding a couple extra missile launchers without needing ammo. And heavy missiles are made for larger targets as well. Sim up your Bellicose with heavy missile launchers, and ditch the salvager, and you should be right. Take some time to learn the tech well, install it, and make flat out to teach the bung bastards not to mess with you.
For missions like recon, even a setup like that you'll likely need to make a few momentary, strategic retreats to rep up and reload, but it's possible. A more sturdy answer would be to knuckle under on learning to pilot a battle cruiser, but let's just take it one day at a time. Besides, aren't you supposed to be a student, still? Be patient, mate.
As for the weird disappearing PI; that stuff happens every once in a while. I myself just lost a Corax in the abyss to some connection issue between my pod and my ship. I was blazing away, sweet as, one minute, and then blacked out and woke up in a med clone at my home station. Stink one, hard, but at least it wasn't in a more expensive ship. I'm grateful for that, at least.
